Vegetarian Tacos

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Toppings: shredded lettuce, diced tomatoes, avocado, cilantro, lime wedges

Instructions:

  1. Heat olive oil in a pan over medium heat.
  2. Add the onion and garlic, and sauté until translucent.
  3. Stir in black beans, corn, cumin, and chili powder. Cook for 5 minutes.
  4. Season with salt and pepper.
  5. Warm tortillas in a separate pan.
  6. Fill tortillas with the bean mixture and top with lettuce, tomatoes, avocado, cilantro, and lime wedges. Serve immediately.
