Vegetarian Tacos
Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 can (14 oz) black beans, drained and rinsed
- 1 cup corn kernels
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 8 small corn tortillas
- Toppings: shredded lettuce, diced tomatoes, avocado, cilantro, lime wedges
Instructions:
- Heat olive oil in a pan over medium heat.
- Add the onion and garlic, and sauté until translucent.
- Stir in black beans, corn, cumin, and chili powder. Cook for 5 minutes.
- Season with salt and pepper.
- Warm tortillas in a separate pan.
- Fill tortillas with the bean mixture and top with lettuce, tomatoes, avocado, cilantro, and lime wedges. Serve immediately.
