Stuffed Zucchini Boats

Ingredients

  • 4 large zucchinis
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 cup diced tomatoes
  • 1 cup cooked quinoa
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the center to create boats.
  3. Heat olive oil in a pan over medium heat. Add onion and garlic, and sauté until translucent.
  4. Stir in diced tomatoes and cooked quinoa. Cook for 5 minutes.
  5. Season with salt and pepper. Remove from heat and mix in Parmesan cheese.
  6. Fill zucchini boats with the mixture and place them in a baking dish.
  7. Top with shredded mozzarella cheese and bake for 25 minutes.
  8. Garnish with fresh parsley and serve.
