Stuffed Zucchini Boats
Ingredients
- 4 large zucchinis
- 1 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup diced tomatoes
- 1 cup cooked quinoa
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the center to create boats.
- Heat olive oil in a pan over medium heat. Add onion and garlic, and sauté until translucent.
- Stir in diced tomatoes and cooked quinoa. Cook for 5 minutes.
- Season with salt and pepper. Remove from heat and mix in Parmesan cheese.
- Fill zucchini boats with the mixture and place them in a baking dish.
- Top with shredded mozzarella cheese and bake for 25 minutes.
- Garnish with fresh parsley and serve.
