Stuffed Bell Peppers

Ingredients

  • 4 bell peppers
  • 1 cup cooked quinoa
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Stuff the bell peppers with the mixture and place them in a baking dish.
  5. Top with shredded cheese and bake for 25-30 minutes.
  6. Garnish with cilantro and serve.
